I feel the Indian cuisine is extremely well balanced, both in taste and composition. I have tried some other cuisines but after a while I get tired of the singular taste of the dish. No wonder you need a glass of juice or soft drink to change the tatse. Being a vegetarian, I am not the best person to comment on other cuisines BUT, I can say this---"you cannot get so much variety of taste in any other meal as you get in a single Indian meal, done right :-). Here the operating words are "done right"! Of course, if you go the Phyllis Diller (Look at her quote in the footnote) way, even toasted bread will taste bad!

I am not a great cook, but I like to try different things. The best thing about cooking is that you can alter any recipe to suit your needs. So I add garam masala/chili powder or any other spice that is handy, unabashedly to any non-indian recipe to give it a zing.

I will soon post some modified/ original recipes that I have tried and liked (wherever the recipe is original, I will cite the source from where I took the recipe).
